Ethiopia is the most important coffee origin to Ten Drops. This is our final washed Yirgacheffe from the season (the new season in the US starts somewhere between March and June, likely)
It is everything we want it to be–the floral, crisp, soft sweetness and clean finish. It’s bright, but not tart. We target a toffee-like sweetness and a black tea body… it’s sort of what we’re always after with washed Ethiopian coffees, and this one does it very well.
This roast would be challenging to use on espresso, as it’s on the fast side… the coffee seems to respond best to high heat and aggressive roasting, so it’s a short overall roast time, but with significant development in that window. I tend to think most roasters who think about development time calibrate that idea on washed Ethiopia and perhaps washed Colombian high density coffees. In any event, that leads to this coffee being a pretty undeniable pourover, and a great pot of coffee, in that 55-58g : 1L ratio. Enjoy!
