Processing: Fully washed and fermented for 20-24 hours at each farm. Fully sun-dried on raised African beds and concrete patios.
Las Cotorras coffee is grown at 1300-1700 MASL in the cloud forest highlands of Chiapas. The lot is named after the brightly colored parrots that inhabit the region. The birds themselves have cultural significance, symbolizing “authenticity” and “freedom.”
This lot is a very high quality regional, as combined output from several small high altitude farms in the area. We buy this coffee and its blender grade from Caravela, annually.
Coffee from Las Cotorras is unique for its sweet notes of chocolate, red fruit, spices, raisins, and its creamy and full body.
We like a melange roast for this coffee, blending a milk chocolate light roast with a fuller body medium light roast of similar development time.
Very extractable, no sourness at all. We’re just maximizing a few things we like about this coffee. A limited time offering for us, and really a great coffee to wake up to in the morning.
This is an ideal filter coffee, also great on French Press. It has enough development to work well as a modern espresso, if your gear is up to it. When in doubt, I would lean toward Green Eyes or Outsiders for espresso.
